Flor de sal (the flower of salt), known as the "caviar of salts", has a highly valued clean and delicate, almost sweet flavour. Ordinary table salt tastes pungent compared to the pinkish grey crystals of the flower of salt. The flower of salt is a kind of rarity, because the valuable product can only be harvested in salt swamps during the three months of summer, and the process is done completely by hand. According to the local legend, salt is only formed in the salt fields when the eastern wind blows.
